Edel de cleron -- a lovely Franche-Compte (france) brie style cheese, it's actually aged in spruce bark so it has some nutty sweetness to it! it's a gentle cheese but very tasty!
Christmas cheddar -- an eight year old, barrel aged, good old ontario cheddar that only comes at Christmas time (it's made by a farm called (at?) 'mapledale'). nice, strong, and almost stinky! it's the texture though that's really great; it's smooth but crumbly and has these gritty calcium deposits that crunch. it's a favourite.
Zamorano -- a sheep milk cheese from the Spanish side of the Pyrenees. it's caramel-like and sweet. real nice! again it's a milder one
He put on a turn-down collar, a black bow, and wore his Sunday tail-coat. As such, he looked spruce, and what his clothes would not do, his instinct for making the most of his good looks would.
