(in no particular favorite order)

Pink Floyd - Breathe (the woman's voice building up is just awesome)
Spiritualized - Shine A Light (live version from Fucked Up Inside)
Spiritualized - 200 Bars
Global Communications - gamma phase (the whole chapterhouse:bloodmusic record has lots of great, subtle, slow and brilliant buildups)
Underworld - Rez/Cowgirl

Hmm, some of the ones people have suggested seem weird, they don't build up much.
I've got a few extras that I can think of:
Crystal Method - Trip like I do
Orbital - Forever
Orbital - Out There Somewhere?
Orbital - Planet of the Shapes
Orbital - Dwr Budr
Fatboy Slim - Acid 8000
Leftfield - Song of Life
Prodigy - Weather Experience
The Chemical Brothers - Where do I begin
The Chemical Brothers - It began in Afrika
The Chemical Brothers - Galaxy Bounce (TR edit)
Some are better than others, and there's some that were so close to making the list (e.g. Elektrobank). There's even some that should be on the list but I've forgotten them. 8)

'tis true, anType - variety is the spice of life! I could go on forever about Chemical buildups, they are masters of them, so it's good to read what other stuff besides the Chems people are hearing. Plus I love buildups in songs. I tend to go for the more slower, trippy subtle kind. I think buildups and easy going breakdowns make for really epic pieces. Gotta love em.
And good call on Radian. I like Air's buildup in La Femme D'Argent from Moon Safari. It's a great record opener, and it builds up in a way so as to gently ease the listener into another world. Fantastic!
