well if i thought they were 'pretending', then i wouldn't have seen them live so many times. the way i see it is its a bit like djing on a grand scale. instead of having records playing through a couple of channels, you got that giant multi-track mixer running pre sequenced and on the fly sounds. now if you imagine each sound running through the mixer you can effect, like volume and EQ's also you can send them to external effects like delays a echos. then there is the mpc sampler/sequencer to the right of the stage which you see tom hunched over. watch tom hit one of those pads and listen to something like the drums get ripped up!
as for the visuals. i notice that the veggies have a video camera on the mixing desk, they can watch what tom is doing on the desk. it wouldn't be to hard to communicate when need the visuals change through a bit of sign language.

From what I've seen, that is indeed how they play live. Underworld do a similar thing too. Besides working the mixer and samplers, in some sections Tom or Ed might go over to one of the synths and make some crazy noises (like the LFO thing at the end of TPPR).
As for visuals, there are VJ dudes who mix the visuals in a similar way to how DJ's mix records - they can slow down and speed up visuals to get them in time with the music, and retrigger clips etc. so they start at the right time.

If you have access to the BBC 3 footage and the Lowlands audio the transition from HBHG to GYH sounds different at each gig, at Glastonbury the mixing into GYH sounds 'normal' and there's a moment when there's those weird voice noises from HBHG (sounds like 'd'd'd'd'd') that is accentuated. In the Lowlands audio there are different synth noises near the end of GYH/HBHG and there isn't the loud 'voice noises'.
